Umesh Dosa began with one griddle, one family recipe book and a simple promise: nothing leaves the kitchen that we would not serve at our own table.
Our batter ferments overnight, the chutneys are ground the same morning, and every dosa is spread only once you order it — which is why it reaches you still crackling. The sambhar simmers with tamarind and fresh drumstick, and the coffee decoction drips slow through a brass filter.
